Greek Salad




1 Head of Leaf Lettuce
1/4 cup sliced Zuccini
1/4 cup diced sun dried tomatoes
1/4 cup diced raw black greek olives
1/4 cup raw cashews
1/4 dried fruit of choice

Basil Vinegrette
2 Tablespoons dried basil
3 Tablespoons olive oil
2 Tablespoons balsamic vinegar
1 clove garlic crushed

Mix vinegrette and then shower over the mixed salad. The cashews serve to replace the feta but all the other great tastes are still there....
